Morning Glory Cake (carrot cake and more!)

All-Purpose White Flour, 2 cup Baking Soda, 1 tsp Baking Powder, 1 tsp Salt, 1 tsp Cinnamon, ground, 2 tsp Granulated Sugar, 3/4 Plain non-fat Yogurt 3/4 cupCanola Oil, 1/4 cup1 egg2 egg whitesVanilla Extract, 1 tspCarrots, raw, 2 cup, grated Coconut, raw, 1/2 cup, shreddedWalnuts, 1 cup, chopped 1 cup crushed pineapple, drained (20 oz can drained=approx 8 oz)
Grease a 13x9x2 pan.
Sift flour, soda, powder, salt, cinnamon. Make well in center and add sugar, oil, yogurt, eggs and vanilla.
Beat with a spoon until smooth.
Stir in carrots, coconut, walnuts and pineapple.
Optional: raisins and half the flour whole wheat.
Makes 24 - 2 1/4" x 2 1/4" squares.
Bake at 350 for 40-45 minutes or until center springs back.
Can top with cream cheese frosting.
