Ingredients
2 c. Cabbage (fresh)1/4c. Sweet Corn1/2c. Cubanelle Peppers (aka Frying Peppers)1/4c. Onions1 clove of Garlic1 tsp of extra virgin olive oil**a few dashes of adobo seasoning (I like it with Cumin added)
Directions
Wash and then chop cabbage. Slice Peppers and crush fresh garlic. Prepare your non-stick skillet with 1 tsp of extra virgin olive oil. Once skillet is hot, on medium heat, toss in your garlic. Once garlic is transparent, add peppers, onions, corn and cabbage. Add a few dashes of adobo seasoning (salt). Cook until tender. Makes 1 serving.
