Ingredients
*Extra Virgin Olive Oil, 2 tbsp Onions, raw, 2 large Chicken Breast, no skin, 3 breast, bone and skin removed Carrots, raw, 1 large (7-1/4" to 8-1/2" long) Garlic, 2 cloves Jalapeno Peppers, 1 pepper Thyme, fresh, 2 tsp *College Inn Chicken Broth - 99% Fat Free, 8 cup Beans, black, 2 cup Spinach, fresh, 6 cup *Tomatoes, red, ripe, raw, year round average, 1 large whole (3" dia) Salt, 1 dash Pepper, black, 1 dash Parmesan Cheese, grated, 7 tbsp
Directions
Heat oil in a large stockpot over medium heat. Add onions, stirring occasionally, for 10 mins. Add chicken stirring occasionally, until chicken is through and onions are lighty brown. Add carrot, garlic, jalaopeno and thyme; cook another 2 mins. Stir in chicken stock and increase to heat to high. Bring to a boil. Add beans, spinach and tomato. Bring back to a boil, then turn off the heat. Add salt and pepper to taste. Sprinkle each serving with 1 Tbs. Parmesan cheese. Makes 7 servings!
