Slaw:* 1 small cabbage head, shredded* 1 1/2 cup Sweet corn, fresh or frozed * 1 small Red bell pepper, diced* 1/2 cup Cilantro, raw, 1/2 cup minced* 1/2 cup green onions, chopped Dressing: * juice of 1 lime* 2 tbsp Rice Vinegar, 2 tbsp* 2 tbsp light vegan mayonnaise* 1.2 tsp ground cumin* 1/2 tsp garlic powder* 1/2 tsp cayenne pepper* 1/2 tsp chili powder
Combine salad ingredients into a large bowl. in a small bowl whisk together dressing ingredients until smooth. Drizzle over salad and toss. Let sit in refrigerator for 30-60 minutes before serving.
