Baked Chicken and Rice with Black Beans

1 (10 oz) package yellow rice mix1 cup chopped onion1/2 cup green bell pepper1/2 cup chopped carrot1 Tbsp olive oil1 chicken breast no skin boiled and cubed (leave out for vegetarian option)1 (15 oz) can black beans, drained1 (10 oz) can diced tomatoes and green chiles, undrained1 cup shredded Cheddar cheese
Preheat oven to 350 degrees. Prepare rice according to package instructions.
Meanwhile, saute onion, bell pepper and carrot in hot oil in a skillet over medium heat 10 minutes or until tender
Combine hot cooked rice, onion mixture, chicken (optional), beans, diced tomatoes and chiles, and 1.2 cup cheese in a lightly greased baking dish. Sprinkle with remaining 1/2 cup cheese.
Bake, covered, at 350 for 30 minutes; uncover and bake 10 additional minutes or until cheese is melted

This was delicious! I omitted the bell peppers & used 2 cups of Monterey Jack & Colby cheese & a bit more chicken. My husband doesn't like yellow rice, but said this was great anyway. He thought it needed a bit of texture so he wants shredded lettuce on his next time with a dollop of sour cream. - 10/5/12
