Turkey Kielbasa Saute w/ Veggies and Baked Potatoes

2 Medium Red Potatoes7 oz Jennie-O Turkey Kielbasa ½ T. Extra Virgin Olive Oil1 Medium Zucchini1 Red Bell Pepper1 C. Mushrooms3 C. Spinach leaves1/4 C. Small Onion3 oz. Cherry Tomatoesparsley/ salt/ pepper/ ground ginger to taste
Slice potatoes into small ½" - 1/4" pieces, lay on baking sheet and sprinkle EVOO, mix potatoes. Turn oven onto 400 degrees sprinkle parsley, salt, pepper and ground ginger to taste, bake for 10 minutes, then mix up and bake for 10 more minutes.
Slice Turkey Kielbasa in 3 equal parts, then slice down to split pieces, on non-stick pan allow to brown.
In additional non-stick pan, place sliced zucchini, bell pepper and mushrooms. Wait until juices are released and then add spinach. Season to taste.
Once all items complete. Plate meal, then add diced onion and cherry tomatoes on top of sausage. 3 Servings. Yummy.
