Spiced Flax French Toast

Ingredients
2 pieces multigrain bread (I used 12 grain)1/4 cup nonfat (skim) milk2 egg whites1/2 tsp splenda1 tsp vanilla extract1 tsp ground cinnamon1/2 tsp ground nutmeg1/4 tsp ground ginger2/3 tbsp ground flax seed
Directions
Mix milk, egg whites, vanilla, flax, and spices together in a large bowl. Be sure to break up the whites if you don't enjoy your toast eggy.

Let bread soak 20 seconds on each side. Careful, as if you let it soak too long, it will fall apart.

Place in lightly greased frying pan and cook on low-medium heat, flipping until browned on both sides.

Enjoy with condiment of choice, such as sugar-free syrup, powdered sugar, or fresh fruit.

    I've only made French toast a few times, but this was the best by far! I omitted the Splenda and they were still plenty sweet. My husband was happy he couldn't taste the flax and I'm happy they were a little healthier for it! :) - 7/17/11
