Ingredients
Veal Loin, 16 ozButter, salted, 1 tbsp Olive Oil, 1 1tsp Wheat flour, white, all-purpose, enriched, calcium-fortified, .2 tbspSoy Flour, .2 tbspLemon Juice, 1 lemon yields White Wine, 1 fl oz Chicken Broth, 2 fl oz Butter, salted, .25 stick
Directions
Pound veal thin to scallopine thickness. Dredge in flour. Melt butter with oil in pan and pan fry veal until brown on both sides. Deglaze pan with wine and add lemon juice and chicken broth. Reduce by 1/2 and whisk in 1/4 stick butter. Serve hot and garnish with capers if desired.
