4 cups low-sodium vegetable broth2 cups water4 cups chopped kale1 15-oz can no-salt-added diced tomatoes1.5 to 2 cups carrots, diced2 cups potatoes, 1/2-inch ruff cut2 cups black-eyed peas, cooked & drainedsea salt & pepper to taste
Bring broth & 2 cups water to a boil. Add kale, cover & simmer for 10-15 minutes. Add tomatoes, potatoes, and carrots, continue to simmer. Cook until potatoes & carrots are tender, 10-15 minutes. Add black-eyed peas and simmer until heated through. Add sea salt & pepper to taste. Serves 4 to 6
