Vegetarian Sloppy Garden Joes

2 garlic cloves, chopped1 medium onion, chopped2 medium carrots, shredded1 red or green bell pepper, chopped1 cup sliced fresh mushrooms12 oz morningstar veggie crumbles1 8 oz. can tomato sauce1 15 oz. can diced or crushed tomatoes3/4 cup barbecue saucesalt and pepper to taste
1. Saute garlic, onions, carrot, bell pepper and mushrooms in 1 tbsp olive oil over medium-high heat until soft, about 5 minutes.
2. Add veggie crumbles, tomato sauce, crushed tomatoes, mushrooms, barbecue sauce and seasonings and bring to a boil.
3. Reduce heat and simmer uncovered for 10 minutes or until thickened to your liking.
5. Serve on toasted or plain buns (not included in calorie count).
