veggie curry

Ingredients
1/4 cup olive oil2 cups cauliflower2 medium potatoes1 large onion1 cup peas1 tomato1/2 baby zucchini2 cups baby carrots1 red pepper1 green pepper1 celery stalkSAUCE1 can tomato sauce.5 cup yogurt plain1 cup water5 cloves garlic1 tbs ginger root1 stick cinnamon5 cloves1 tsp garam malsa1 tsp tumeric1 1 tsp curry powder1/4 tsp black peppersalt to tastelemon juice
Directions
dice onions and place in large heated pot with olive oil cook until onions are transparent

chop all veggies in to desirable size add to pot

in blender mix all spices and ingredients for the sauce blend until smooth and spices are ground

Add sauce to pot

simmer for at least 1 hour until all veggies are soft

add a squeeze of lemon juice

serve with basmati rice or naan bread

Delicious the next day!!!
