Banana Muffins

Ingredients
1/4 cup Vegetable oil2 Egg, white1 cup Skim Milk1/3 Brown Sugar, packed1/2 tsp Salt1 Tbsp Baking Powder2 cups Whole Wheat Flour
Directions
In a large bowl combine the oil, egg whites, milk, brown sugar and salt. Measure in the baking powder and flour. Mix again until all of the dough particles are moistened. Fold in mashed bananas. Do not over mix. Spoon the batter into a dozen well oiled or paper muffin cups. Bake at 400 degrees for about 20 minutes. Remove from the oven and cool slightly before removing from the pan.
