Wheatless Muffin in a Minute

Ingredients
2 T Flaxseed (grind it in a coffee grinder fresh) or use 1/4 cup flaxseed meal1 tsp ground cinnamon1/2 tsp baking powder1 packet of splenda1 large egg1 tsp extra virgin olive oil
Directions
Mix all dry ingredients together.
Mix in olive oil and egg.
Cook in microwave for approximately 1 minute 20 seconds.

I mix it and cook it in the same dish.
I use a small round glass pyrex dish
The muffin can be cut in half and buttered or spread with your favorit low fat cheese.
If you want a savory muffin, omit the cinnamon and add your favorite spices.
I use these for sandwiches or hamburger buns.
