Broiled Chicken Breast with Cilantro and Lime

Ingredients
~1Tbsp olive oil~2Tbsp. chopped cilantro~1Tbsp. freshly squeezed lime juice~1Tbsp. chopped shallots or onions~1/4tsp. cayenne pepper~salt and pepper to taste~1 boneless, skinless chicken breast~chopped cilantro and lime wedges for garnish, if desired
Directions
Combine oil, cilantro, lime juice, shallots, cayenne, salt and pepper. Spread half of the mixture into the bottom of a pan and add the chicken; sprinkle meat with salt and pepper to taste, then top with the remianing mixture. Broil until cooked through; about 10 minutes. Garnish with chopped cilantro and lime wedges, if desired.
