Teriyaki Tofu

1/2 12 oz package Extra Firm Tofu4 Tbs Bottled Teriyaki Sauce1/2 bag frozen mixed vegetables1 1/4 cups hot cooked short grain rice
Slice Tofu into very thin (1/4 inch or so) slices and then diagonally into triangles. Press between paper or dish towels and two cutting boards with a couple of cans on top. Allow water to soak up for about 20 minutes. In a non-stick pan with no oil or cooking spray, place slices in one layer and cook on high heat until dried and golden (not browned). Press down on pieces with spatula while cooking. Remove and cool, then marinate tofu in Teriyaki Sauce for 30 minutes. Steam frozen veggies until cooked but still firm. Stir fry tofu on medium high heat until teriyaki sauce begins to carmelize, about 5-7 minutes. Add any remaining marinade and cook until boiling (feel free to add extra sauce if desired). Add veggies and mix well. Serve over hot cooked rice. Makes two servings.
