Rice Pudding

Ingredients
3 c brown rice1.5 c milk (non fat is best!)1 egg beaten Optional i did it for nutrientscurrants about 1/8 cupcinnamon2 tbs brown sugar
Directions
Combine all and heat til a thick pudding. I do in a rice cooker on porrige cycle, but you can do on stove top, just make sure you don't scorch it.
you can add what ever dried fruit you want. i happened to grab currants, but it's good with craisins or raisins or chopped nuts etc. makes 4 one cup servings.

    I used raisins instead of currants...& lots of cinamon!!! Great with leftover brown rice...I find 1/2 cup servings a filling portion. - 9/18/11

    I REALLY liked this! I had leftover rice, so I made it easily and quickly in the microwave. Next time, I will add more raisins and more cinnamon. And maybe walnuts. I could eat this every day! - 2/20/15
