Spinach Stuffed Manicotti

1 lb Fresh Spinach1 8oz tub of Ricotta Cheese1/2 medium white onion (diced)2 26oz cans of spaghetti sauce5 cloves of fresh garlic (diced fine)1 cup Parmesan Cheese1 box Manicotti (10 count)1 tbsp Olive Oil
Put 1 tbsp of olive oil in a frying pan and warm (but do not brown) garlic and onions. Steam spinach for about 5 minutes to soften the leaves, then chop up fine. Add spinach to frying pan and warm through, stirring frequently.
Cook manicotti noodles until al dente then drain.
Prepare a large cassarole dish by pouring 1/2 of one can of spaghetti sauce in the bottom and spreading evenly.
Mix spinach/onion/garlic mixture in a bowl with the ricotta and parmesan cheeses. Use mixture to carefully fill shells and place filled shells in the cassarole dish.
Cover the shells with the rest of the sauce and place in preheated 400 degree oven for 30 minutes.
