Spinach Stuffed Manicotti

Ingredients
1 lb Fresh Spinach1 8oz tub of Ricotta Cheese1/2 medium white onion (diced)2 26oz cans of spaghetti sauce5 cloves of fresh garlic (diced fine)1 cup Parmesan Cheese1 box Manicotti (10 count)1 tbsp Olive Oil
Directions
Put 1 tbsp of olive oil in a frying pan and warm (but do not brown) garlic and onions. Steam spinach for about 5 minutes to soften the leaves, then chop up fine. Add spinach to frying pan and warm through, stirring frequently.

Cook manicotti noodles until al dente then drain.

Prepare a large cassarole dish by pouring 1/2 of one can of spaghetti sauce in the bottom and spreading evenly.

Mix spinach/onion/garlic mixture in a bowl with the ricotta and parmesan cheeses. Use mixture to carefully fill shells and place filled shells in the cassarole dish.

Cover the shells with the rest of the sauce and place in preheated 400 degree oven for 30 minutes.

    Very good! I used non fat ricotta cheese. The garlic, onions, parmesan cheese and spinach give it the full flavor without the added calories of using low fat ricotta. I also used homemade sauce instead of canned. - 6/18/12

    To save time, I didn't boil the manicotti. Using only 1 can of spaghetti sauce, I simply stuffed per directions and covered tightly with foil and baked for 35 min. Used this for my valentine meal. Honey and step-son enjoyed it. - 2/14/10

    My whole family loved this recipe, the only thing we did different was we stuffed noodle without cooking, then covered the whole dish with tin foil then cooked for 1 1/2 hours - 6/1/07
