Bread Pudding

Ingredients
4 cups day old bread cubed1/2 cup sugar1 tsp cinnamon1/2 tsp salt1/2 cup egg whites (or 2 whole egg whites)1 large egg1 cup skim milk1 tbsp country crock spread melted1/2 cup raisins
Directions
Preheat oven to 350 degrees.
Bake time: 30 minutes or until lightly brown.
I used an 8" round non-stick baking pan.

Place 4 cups day old cubed bread in baking pan. Add raisins(I microwaved the raisins in water for 45 seconds then drained for plumper raisins). Set pan aside.
In medium mixing bowl add: country crock spread, egg whites, egg, sugar, milk, cinnamon and salt. Mix well.
Pour over bread and mix well to coat all bread pieces. Bake at 350 degrees for 30 minutes.

    I have never had bread pudding before, so I have no basis for comparison. This tasted pretty good, though it was a tad dry. Maybe I didn't use the right pan. I'll make it again though, defiantly. - 8/22/11
