Grandma's almond tofu

Ingredients
1.5 cup watera little less than 0.5 cup granulated sugar0.75 cup non fat evaporated milk2 tsp almond extract2 packets unflavored knox gelatin1 12oz can of fruit cocktail in lite syrup or water
Directions
Empty 2 packets of unflavored knox gelatin into a medium-small sized sauce pan set on a medium-low setting. Pour 0.5 cups of boiling water into sauce pan. Stir until gelatin dissolves. Add sugar, non-fat evaporated milk and the remaining quantity of water to the pot. Stir until consistency is even, be careful not to stir too quickly and create bubbles. Add the almond extract & stir (can add a greater quantity if you like a stronger almond flavor). Pour liquid into a 10 x 10 pan. Place into refrigerator and allow to cool & harden to a firmer-than-jello consistancy, takes approximately 2 hours. When hardened, remove from fridge, cut into 1/2 inch cubes w/ a butter knife. Add cubes to a serving dish, mix with a 12 oz can of fruit cockail and serve. Makes four 1.25 cup servings.
