Gluten Free Banana Muffins

Ingredients
1 Egg1/4 cup 2% Milk (you can use any liquid according to the recipe.)2 Tbsp. Sugar2 Tbsp Canola Oil1 cup White Rice Flour2 tsp Baking Powder1/2 tsp Salt1-2 Mashed Overripe Bananas
Directions
Preheat oven to 425 degrees. Lightly grease a 12 cup muffin tin. Mix all ingredients together in a mixing bowl. Bake for 15-17 minutes. Allow muffins to cool 5 minutes before removing from the tin.

    yes Geogirl! Add the vanilla indeed. Plus omit the butter and add non-fat youghurt instead. Lemon zest & juice [or use oranges.] Fresh ginger, cardamom & nutmeg too. I swap out the sugar and add dried apricots that have been rehydrated in boiling water. Could use dates instead. - 6/3/09
