Orange Soia or Tofu Chicken

Ingredients
* 1 tablespoon vegetable oil for frying * 1/2 teaspoon cornstarch * 55 grams soia pre boiled or 1 (8 oz) package firm tofu, drained and cut into strips * 2 tablespoons soy sauce * 1/2 cup orange juice or juice from 1 orange * 1/2 teaspoon ground ginger * 2 carrots, sliced thinly * 1 orange * 1/4 cup chopped walnuts * 2 tablespoons minced fresh parsley * add chili if you want a bit of a kick
Directions
In a skillet or wok, cook the soia or tofu, carrots, and onions in oil until the onions are translucent and the soia/tofu is browned. In a small bowl, combine the cornstarch, orange juice, soy sauce and ginger until smooth. Pour over soia/tofu mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Serve over rice. Top with orange segments, walnuts and parsley.

Serve over rice.

****Make sure the carrots are sliced thinly or they wont cook through. You could add or substitute in a red bell pepper.
