Bean and Ham Soup

Directions
Begin with ham bone covered with water (approx 8 cups) and the chopped onion in a large stock pot. Boil for one hour. Remove ham bone to cool. Add beans that have been soaked according to package directions and chopped carrots. Remove cooled meat from ham bone and add back to pot. You may want to add more ham as desired. Boil an additional 2-3 hours or until beans are the desired texture/doneness.

    Made this yesterday... It is really good and I had put the ham-bone from Easter in my freezer so I could do this when I had time... Really easy recipe... Let simmer most of the evening and made a great lunch for the next day.. It made a lot so I'll be sharing with some friends-Very good - 5/6/10
