New Orleans/Mexican Tilapia

2 tilapia filets, 4 ozOld Bay Seasoning, 1/4 teaspoon3 Plum Tomatos (sliced)Salt, 1 dashOlive Oil, 2 tablespoonsLime juice, 1 lime.
Preheat the oven to 350.
Cover both filets in 1 tbs of olive oil, the other table spoon will be used later, sprinkle seasoning generously on each side. In a large shallow pan, add the tilapia. Cook for 10 minutes or untill almost done.
Pull it out of the oven and lower the temperature to 250 (adjust the heat as not to overcook the fish; if it seems too hot, lower the temperature). Add the sliced tomatoes and the olive oil on and around the fish. Add a dash of salt. Place back into the oven for about 5-7 minutes or untill the fish is flakey and the tomatos are tender.
Top with lime juice.
Serving size: makes 2, 4oz. pieces.
