Slow Roasted Garlic & Lemon Chicken

Ingredients
3lbs of chicken cut up or chicken breast.2 - lemons1 - head of garlic1 - bunch of fresh thyme3 - tbsp of olive oil2/3 cupof white winesalt and pepper
Directions
preheat oven 325. place chicken in shallow roasting pan. Slice lemons into 8 pieces. cut farlic and seperate cloves. Add all above ingredients to chicken and thyme. Drizzle oil over the chicken, useing your hads, toss evenly to coat, pour wine over chicken and sprinkle salt and pepper. Tightly cover pan with foil, roast in centre of oven fpr 11/2 hours. Remove foil and turn oven to 400 and continue roasting uncovered for 30 mins or until skin is brown and lemon start to carmelize around the edges. makes approx. 6-8 servings.
