Chicken Florentine

Ingredients
3/4 lb skinless, boneless chicken breasts1 small onion, chopped2 T butter1 garlic clove1 pkg of frozen spinach (10 oz)1 C chicken broth1/2 C water1 C Minute Rice1/3 C Grated Parmesan Cheese
Directions
Cook and stir chicken and onion in hot butter in large skillet until chicken is lightly browned. Add garlic and cook 30 seconds. Add spinach, broth, and water. Bring to boil. Reduce heat; simmer 3 minutes. Stir in rice and cheese. Cover; remove from heat. Let stand 5 minutes. Fluff with fork.

    I thought this was good. I added a litle to it - .5 pkg sundried tomatoes chopped , a bit of ground pepper, some itailian seasoning and pine nuts. I also made Quinoa instead of rice in a seperate dish. - 3/10/09
