Chicken Biriyani

Ingredients
2 lbs boneless chicken2 roma tomatoes1 bunch plucked and chopped mint leaves1.5 inch ginger chopped10 cloves garlic chopped2 serrano peppers, seeded and chopped1/4 tsp cayenne pepper1tsp turmeric powdersalt to taste4 cloves4 cardamom pods2 inch stick of cinnamon2 bay leaves2 tblspns canola oil3 tblspns unsalted butter1.5 cups basmati rice
Directions
1. Soak rice in water for 20 minutes. Drain and reserve soaking water.

2. Heat oil and butter mixture; when hot add dry spices(cloves, cardamom, cinnamon, and bay leaf).

3. Add ginger, garlic - fry for one minute; Add onions, serrano pepper, tomatoes, mint. Stir until onion is wilted.

4. Add chicken, turmeric, salt, and cayenne. Saute. Cover and cook 2 minutes.

5. Add the rice and measure out 2 1/4 cups of soaking water. Adjust water to amount present in chicken mixture. Salt to taste.

6. Bring mixture to a rolling boil. Reduce heat to minimum; cover and cook for 20 minutes.

    It was a bit of work - but seemed worth it. I took a few shortcuts - I used spices in my cupboard for the Cardamom, Cloves. I also used Ginger paste and Garlic paste in stead of chopping all that. The ingredients were missing the onion so I added 1/2 an onion. I also ended up cooking 30 mins extra. - 3/8/09
