Shrimp Couscous Salad

Ingredients
1/2 lb shrimp, deveined, peeled1 cup couscous uncooked1 tsp vegetable oil1/2 tsp dark sesame oil1.5 tsp low sodium soy sauce1 garlic clove, crushed1.5 cup thin sliced romaine lettuce1 cup red bell pepper, chopped3/4 cup frozen green peas, thawed1/4 cup cilantro, chopped2 tsp finely chopped unsalted dry roast peanuts
Directions
Boil 2 cups water in medium saucepan
Add shrimp, cook 3 minutes, drain and rinse. Cut shrimp in half. Boil 1 1/4 cups water in saucepan, gradually stir in couscous

Remove from heat. Cover and let stand 5 min, fluff and cool.

Combine vinegar, veg oil, soy sauce, sesame oil in large mixing bowl. Add shrimp, couscous, lettuce, bell pepper, peas and cilantro. Toss well.
Sprinkle with peanuts.
