1/2 Barley Couscous Belazu Brand Red Ripe Tomatoes, 1 medium whole Parsley, 1/2 of 1 bunch chopped finelyCilantro, 1/2 of 1 bunch chopped finely Lemon Juice, (1/2 lemon)Feta Cheese, chopped or crumbled 1 oz garlic salt 1 tsppepper 1tspcumin 1/2 tsp
Mix the spices with the dry couscous and add 1/2 cup boiling water, let sit covered for 5 minutes.
Chop herbs and tomatoes while cooling, then add to couscous. Mix in the rest of the ingredients and serve. 2 servings, can easily be doubled.
