Vegan Blueberry Pancakes

Ingredients
1 1/2 C whole wheat flour2 tsp baking powder1 tbsp cornstarchdash of salt1 tsp vanilla extract1 tbsp orange juice (preferably fresh)1 1/2 C Light Plain Soy Milk3/4 C frozen blueberries, thawed
Directions
In a medium bowl, combine all your dry ingredients. Place blueberries in a small bowl and coat with one spoonful of dry mix; it will keep from turning your batter blue.
Add the wet ingredients; stir to combine. Mix in blueberries.

    Made these for brunch today. Next time will thin them out as they were way too thick for my liking. Great taste though. I also use applesauce instead of syrup for mine. - 5/16/13
