Greek Salmon

Ingredients
Salmon fillet for 2 people (recipe calculated for 7oz each)1/4c feta1 plum or roma tomato, diced1/4-1/2 cup kalamata olives, chopped1/4 red onion, diced4 basil leaves, choppedolive oillemon juice to taste
Directions
Preheat oven to 350

Lightly coat both sides of salmon with olive oil and place skin-side down in baking dish.

Top fish with tomatoes, onion, basil, olives and feta. Drizzle with lemon juice as desired

Bake for 20 minutes or until flaky.
