Vegan Traditional Tomato Sauce

4 cloves garlic, minced1 small onion, chopped1 small carrot, chopped1/2 cup mixed green and red pepper, chopped8-10 mushrooms, sliced1 tsp dried oregano1/2 tsp dried basil1/4 tsp dried thyme1/4 tsp pepper1 tsp salt2 Tbsp olive oil1 tsp sweetener1 5-1/2 oz can tomato paste5-8 fresh tomatoes, diced1 28 oz (793 gram) can crushed tomatoes
In a large pot, saute the garlic, onions, carrots, peppers, mushrooms, oregano, basil, thyme, pepper, and salt in oil on medium heat until onions are translucent.
Add the sweetener, tomato paste, and tomatoes. Cover with lit and simmer on medium-low heat for 15-30 minutes, stirring occasionally.
Serve with pasta.
*This sauce is thick; You can make it thinner by adding a little stock or water until you've reached the desired consistency.
Makes about 4-6 servings, depending on if you add stock or water.
