Stir Fry Vegetable Omelette

Ingredients
1/2 cup Garden Blends Stir Fry Vegetables1/2 cup Better 'n' Eggs substitute1/2 Tbsp Olive OilSalt and pepper to taste.
Directions
Heat olive oil in small-medium non stick pan on medium-high heat. Stir fry veggies until crisp-tender (about 4 minutes). Put veggies in bowl and set aside.

Reduce heat to medium. Allow pan to cool slightly. Give pan a quick spray with non-stick spray. Pour in egg substitute. Season with salt and pepper. Allow to cook until egg is mostly set. Place veggies on one half of the omelette and fold over. Cook a minute or two more to heat through and allow eggs to set up completely.
