2 cups long grain brown rice1 medium onion, finely chopped2-3 large cloves garlic , minced2-3 TBSP chili powder1-2 TSP ground cumin1/2 t sea salt1TBSP canola oil4-1/2 cups water1, 15.5 oz. can red or black beans
Put oil, rice, onions, and garlic in a heavy saucepan over medium heat, stirring often, until golden brown.
Add chili powder, ground cumin and salt, and stir to coat rice mixture.
Add water, bring to a boil, then stir and lower heat to simmer. Cover with a tight-fitting lid. Cook for 40 minutes, or until water is absorbed. Fluff with a fork.
Drain and rinse the beans, and add to rice mixture.
