Edamame & Spinach Spaghetti

Ingredients
1 c. shelled frozen edamame4 oz. whole wheat spagheti1 tbsp. olive oil4 cloves garlic, chopped fine10 0z. pkg. frozen spinach, thawed1/4 c. parmesan cheese
Directions
Cook edamame in boilng water until crisp tender, about 3 mins. Remove to a large bowl with slotted spoon.

Add pasta to boiling water and cook according to package directions. Put aside 1/2 cup cooking water. Drain in Colander and add to edamame. Drizzle with 1/2 tsp. olive oil and mix well.

In large skillet heat remaining olive oil over medium heat and saute garlic until just turning brown. Add spinach and heat through. Add spaghetti-edamame mixture and heat through adding cooking water as needed to maintain nice moist consistency. Season with salt & pepper to taste.

Remove pan from heat and toss with cheese.

Serve immediately.
