Spinach - 2 bunchesPotatoes - 4 largeOnions - 1 mediumGinger - 3 tspGarlic - 3 tspHot Green Chillies - 2 (adjust to taste)Cayenne Pepper - 2 tsp (adjust to taste)Turmeric Powder - 1 tbspCumin Seeds - 1 tspCoriander (ground) - 1 tbspOlive Oil - 1.5 tbspTomatoes - 1 or canned tomatoes .5 cupSalt - 2 tsp
makes 6-1 cup servings
1. Wash spinach and steam with small amount of water
2. Boil potatoes, peel and cut into bite size pieces
3. When spinach has cooled, use hand blender and process
4. Chop onions, garlic, ginger, green chillies (this can be done in a food processor if desired)
5. Heat olive oil and add cumin seeds
6. When cumin seeds start to brown, add onions and fry for a few minutes
7. Add ginger, garlic and green chillies and continue frying for approximately 5 more minutes
8. Add canned or fresh chopped tomatoes
9. Continue frying until tomatoes are cooked
10. Add remaining spices and roast for 1-2 minutes
11. Add potatoes and fry for a few minutes
12. Add spinach and continue cooking for 15-20 minutes. Add water if necessary and cook to desired consistency.
** Warning - in step 12, a lot of splattering can happen, so keep covered during cooking ****

Thanks! It is a bit of a challenge to remember everything that goes in the recipe because I am so used to just making it instead of thinking about it LOL. One ingredient that I forgot to mention is salt but I am not sure how to modify the recipe! Amount of Potatoes is definitely to one's liking!
