Curry Couscous

1 T EVOO1 3/4 C chicken broth3 carrots, finely shredded2 scallions, finely chopped1 T curry powder1 1/2 tsp turmeric1 1/2 C couscous (dry)1/4 C sliced almonds
In large saucepan, heat 1 T EVOO, over med heat. Add the carrots and scallions, season wiht salt and pepper and cook for 2 min. Sitr in the chicken broth, curry and turmeric and bring to a boil. Sitr in the couscous, turn off the heat, cover tightly and let stand for 5 min. Fluff with fork and stir in almonds.
