Korean Beef In Lettuce Leaves

3 TBSP orange marmalade2 TBSP reduced sodium soy sauce1 TBSP hoisin sauce1 TBSP freshly grated ginger1 clove garlic minced1 lb extra lean ground beef8 scallions, sliced2 carrots finely chopped1 red bell pepper, seeded and finely chopped12 Boston or Bibb Lettuce leaves
Whisk together marmalade, soy sacue, hoisin sauce, ginger and garlic in a small bowl.
Heat the skilled and cook beef, scallions, carrots, and pepper for 5-7 minutes stirring often until beef is browned and cooked through. Add the soy mixture and cook stirring for 5 minutes or until well blended.
Spoon the beef into the lettuce leaves and serve, or roll like a wrap to eat.
