Cauliflower Green Chili Soup

2 tsp Olive Oil2 leeks chopped (white and light green portions)4 stalks celery chopped2 garlic cloves minced1 - 4oz can diced green chilies1 cup sliced mushrooms1 tsp ground cumin1 med cauliflower roughly chopped1 medium Yuknon Gold Potato chopped8 cups low sodium chicken broth1 Tbsp cilantro chopped
Heat oil on medium in large heavy bottomed saucepan. Saute leeks, garlic, celery, chilies, cumin and mushrooms until softened (about 5 minutes).
Coarsely chop cauliflower and add to pan along with chicken broth and chopped potato. Cover and simmer until cauliflower and potato are tender when pierced with fork. Smoothly puree half of mixture and return to pan, cooking an additional 15 minutes. Add salt and pepper to taste and garnish with cilantro
