1 lb. boneless skinless chicken breast (4 -----pieces)4 TBSP zesty fat free Italian dressing 2 cloves Garlic1/2 TBSP basil1 tsp. Red Pepper10 oz. package frozen Garden Blend ------Vegetables2 TBSP Parmesan cheese
1. Put Veggies in sink, run warm water over them, meanwhile mince the garlic.
2. Pour the dressing and garlic into the skillet cook for 1 minute on medium-high.
3. Add the chicken, all of the red pepper and most of the basil. Cook the chicken until it is no longer pink and juices run clear about 4 to 5 minutes per side. (thermometer reads 165F)
4. Add vegetables and the rest of the basil-stirring- cook until vegetables are heated.
5. Pour on the cheese and serve.
