Delicious Reduced Calorie Stuffed Shells Florentine

Barilla Shells (32)1/2 lb. Part Skim Mozzarella Cheese - grated1-1/2 lb. Part Skim Ricotta Cheese1/4 cup steamed fresh spinach- chopped fine3/4 cup spaghetti sauce
Boil pasta for 10 minutes and drain. Grate 1/2 pound of part skim mozzarella cheese, mix in 20 oz. of part skim ricotta cheese. In a microwave, steam fresh spinach for 1 minute. Drain, blot with paper towel, then chop into small pieces and add to cheese mixture. Spoon 1 tablespoon of cheese mixture into each shell and arrange in a microwavable dish. Cover with 3/4 cup sauce. Microwave on high for 5 minutes and serve with a large tossed salad. Can be made ahead of time and cooked before serving.

My kids are picky about spinach, but didn't even flinch at the sight of it inside the ricotta... I even added a bit more than what the recipe called for. Very easy and light... I will possibly add a bit of pepper and/or Italian spices to add a bit more flavor. I'll definitely make again! - 3/17/09
