Chicken, Black Bean Tortilla Casserole

1 onion, chopped1/2 red pepper, seeded and chopped3 cloves garlic, minced1/2 cup salsaCumin, S&P, oregano2 cans black beans, drained and rinsedcooked chicken - cubedtortillasMonterey jack cheese
Preheat oven to 350F
Saute chopped onion, red pepper and garlic in non-stick pan (I use PAM) until soft, about 5 minutes. Add tomatoes, salsa and spices. Stir in beans & chicken In lightly sprayed 4 quart casserole, spread 1/3 of bean and chicken mix on bottom, top w/4 tortillas and sprinkle with 1 cup cheese. Add another 1/3 of bean/chicken mix, sprinkle w/ cheese. Top with 4 tortillas & cheese. top with remaining bean and chicken mix. cover & bake until bubbly, about 40 minutes. Uncover, sprinkle with remaining cheese and cook 10 minutes longer. Let sit 5 minutes before serving.
