Ingredients
1 1/4 pound shrimp4 plum tomatoes1 cup spanish olives1 Tbsp olive oil1 Tbsp chopped garlic1 Tbsp dried basil1 tsp dried oreganosalt, pepper and red pepper 1 cup uncooked rice
Directions
1) Cook rice according to directions
2) While rice is cooking, heat olive oil in a skillet and add garlic.
3) Coarsely chop tomatoes and olives and add to the skillet. Heat until tomatoes begin to soften.
4) Add shrimp, basil and oregano and heat until shrimp is fully cooked. Add salt, pepper and red pepper to taste.
5) Serve shrimp mixture over rice.
