Berry Syrup for Waffles or Pancakes

Ingredients
2 cups thawed frozen blackberries, raspberries, or combination of both.1 tsp vanilla extract2 tbs raw sugar1/8 cup real maple syrup
Directions
Mix all ingredients in a small saucepan. Over medium-high heat, stir until just boiliing. Continue to stir and cook about 7-10 minutes or until the sauce starts to thicken. Remove from heat and let cool until just warm. Serve over pancakes or waffles either by itself or with fresh whipped cream. Refrigerate any remainder and use within a few days.
Makes enough for 6 servings.

    This was excellent! Mine turned out a little thicker than what I wanted, so I added a tablespoon or two of orange juice and also a pinch of cardamom and cinnamon. It was wonderful on my homemade waffles! Yum!!! - 8/14/09

    You don't even have to put anything but fruit in this. Just cook the fruit and it will turn into a great syrup to replace maple syrup! - 3/29/09

    I love this syrup! If you use rasberries I suggest straining the rasberries because the seeds are annoying, but all in all a great recipe! - 5/27/09
