6 C warm tap water2 C nine grain cracked cereal mix1/4 c millet1 c raw, sunflower seeds1/4 c sesame seeds1/2 c wheat gluten2/3 c honey2/3 c canola oil2 T salt3T yeast3T dough enhancer2 T lecithin12-14 C whole wheat flour
Combine water, cereal mix, millet, sunflower seeds and sesame seeds in mixing bowl. Cover with lid and let rest for 10 minutes to soften grains. Add oil, honey, salt, dough enhancer, gluten, about 6 C flour and yeast to grain mixture. Mix at speed one until a smooth batter is formed. Add remaining flour one cup at a time until dough cleans from the sides of the bowl. Continue to knead until dough is smooth and elastic, the total mixing time is between 10-12 minutes. Divide into 5 loaves and allow to raise until doubled in size. Bake at 350 degrees for 30-35 minutes.
