2 cups oats, rolled (raw) -- use the quick variety, not old fashioned1 1/2 teaspoons baking powder1/2 teaspoon salt1 cup buttermilk, lowfat2 eggs, large1/2 cup applesauce, unsweetened4 teaspoons Splenda Brown Sugar blend1/3 cup Splenda1 teaspoon vanilla extract1 1/2 teaspoons cinnamon1/3 cup Craisins2 tablespoons unsalted almonds, slivered
Preheat oven to 325 F. Combine dry ingredients and add wet ingredients. Mix it all well. Pour into a glass pie plate, which has been sprayed with Pam. Bake for about 40-45 minutes. Let cool, cut into 8 servings and store in the refrigerator or freezer.
To me, this tastes better after it's chilled in the refrigerator. It freezes well too, in case you want to make a double batch.
This has the consistency of a dense coffee cake, but it's good for you! I eat this for breakfast, dessert, or a snack.

This was really good!! I love oatmeal cookies and this is a good alternative. This was more "moist" than I thought it might be ("dense coffee cake" is a good description). I made it in an 5x11 glass pan cuz I didn't have a glass pie plate. I cut it into 16 pieces at only 1.5 WW points per piece. - 7/30/09

I'm glad you enjoyed it. Sometimes I don't use the Craisins either...it's good either way. :)
