Vegetarian Mushroom Chili

Ingredients
1 T. Olive Oil2 cups mushrooms, chopped1 med. onion, diced1 package Morningstar Farm Burger Crumbles2 cloves garlic, minced1 14.5-oz. can pureed tomatoes1 14.5-oz. can diced tomatoes2 14.5-oz. can kidney beans3 T. chili powder (or more to taste)2 t. salt
Directions
1. In a large pot, saute onions and mushrooms in olive oil until tender.
2. Add Morningstar Farm Burger Crumbles and garlic, stir and break up till cooked through.
3. Add canned tomatoes, kidney beans, chili powder and salt. Mix well and bring to a boil.
4. Simmer over low heat, with occasional stirring, for at least two hours.

You can add other veggies that you like, such as red peppers, corn, zucchini. Anything goes!
