Lime Quinoa Salad with Mint

Ingredients
1 cup quinoa2 T Olive Oil (the best you can afford)2 fresh limes, juiced1 clove garlic minced2 green onions (scallions)2 or more sprigs of mint fresh1/2 c parsley (more or less)
Directions
I still put the quinoa in a strainer and run under cold water. Then cook till spiral separates. Make sure it is tender not chalky. Put on a plate to cool. In a bowl or storage container mix the OO, lime juice and garlic. Finely chop mint and parsley. Clean and make two pieces of the green onion the long way. Slice the green onion whites if half circles and the green in narrow circles. ( I am fussy about this part because my tummy cares) Let sit in fridge....even over night.

    I make a salad very similar but I use lemon juice and add more veggies. I was out of limes so I did use lemon juice this time, next time I'll try lime. I also added some peeled diced cucumber. - 6/24/09

    Very light and refreshing summer salad. When I make this again, I'll probably reduce the parsley, as the flavor can be overwhelming. This would probably pair really well with Mojitos too! - 3/2/09

    Very easy to make and very tasty. I made it for dinner tonight and didn't have a lot of "sit" time so I threw it in the freezer for about 15 minutes and it chilled just enough. Looking forward to left overs tomorrow! - 6/22/09

    Love Quinoa! thanks for another way to prepare it. I substitued 1/3 of the oil for Truffle oil and also added pine nuts. Both add wonderful flavoer to this yummy dish. - 5/5/09
