Chicken and Artichoke Slow Cooker Casserole

2 lbs boneless, skinless chicken breasts1 (14 oz) can artichoke hearts, packed in brine (not oil), drained1 (12 oz) can condensed cream of mushroom soup (I'd personally use the reduced fat variety)
Cut the chicken breasts into 2 inch pieces and put them into the slow cooker. Cut the artichoke hearts in half and add them to the chicken. Add the cream of mushroom soup. Cook for 2 hours on high or 4 to 5 hours on low. Stir and serve.

Pretty good. I don't know if I'd call it a casserole, but it was very good.

I agree, it's really not thick enough to be called a casserole. Mine turns out kind of soupy, so we eat it over brown rice, or whole wheat pasta. The last time I made it, I added a can of drained tomatoes, mushrooms, and some garlic and onion powder. We liked it even better with those additions.
