Honey Balsamic Chicken

1 1/2 tsp of dried thyme1/2 tsp salt1/4 tsp black pepper1 tsp olive oil1lb chicken breast2 tbsp balsamic vinegar2 tbsp honey
Combine first 3 ingredients; sprinkle over both sides of chicken.
Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 7 to 8 minutes on each side or until chicken is done.
Transfer chicken to a platter; keep warm. Reduce heat to medium-low; add vinegar and honey to pan. Simmer 1 minute or until glaze thickens; stir constantly. Pour glaze over chicken. Yield: 4 servings (serving size: 1 chicken breast half).

Great flavor and so easy! I thought the glaze tasted a little like a honey barbecue. Yum! I served it with whole-wheat couscous (prepared with chicken broth, scallions, garlic, curry powder, and a tiny bit of chopped dried apricots and cranberries) and steamed broccoli. i made this last night! my glaze never got thick but it was still awesome and i added some more seasonings to the chicken, some oregano, sage, garlic, seasoning salt. but it was really really good. even my teen "said mom, i think this is the best chicken i ever tasted" so this is going on the list! - 4/19/09
