Honey Balsamic Chicken

Ingredients
1 1/2 tsp of dried thyme1/2 tsp salt1/4 tsp black pepper1 tsp olive oil1lb chicken breast2 tbsp balsamic vinegar2 tbsp honey
Directions
Combine first 3 ingredients; sprinkle over both sides of chicken.

Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 7 to 8 minutes on each side or until chicken is done.

Transfer chicken to a platter; keep warm. Reduce heat to medium-low; add vinegar and honey to pan. Simmer 1 minute or until glaze thickens; stir constantly. Pour glaze over chicken. Yield: 4 servings (serving size: 1 chicken breast half).

    Great flavor and so easy! I thought the glaze tasted a little like a honey barbecue. Yum! I served it with whole-wheat couscous (prepared with chicken broth, scallions, garlic, curry powder, and a tiny bit of chopped dried apricots and cranberries) and steamed broccoli.     soo good! I doubled the amount of sauce and in stead of using the skillet, i cooked it in the oven on 350 for 20 minutes, then i added some sauce, then 10 more minutes. - 1/2/12

    It was very easy to make and the proportions were just right. I didn't have any thyme so I used Italian seasoning and it turned out great. The only thing I noticed is that as the glaze sits, it gets thicker (for those wondering why it's so runny). Delicious! - 10/19/09
