chipotle pork quesadillas

2 boneless porkchops2 tablespoons of olive oil1/2 onion, chopped1 cup canned diced tomatoes3 garlic cloves1 chipotle chile in adobo sauce, finley chopped1/2 cup chopped cilantro2 tortillas1/2 cup shredded monterey jack cheese
season pork chops. In a large skillet heat 1 tablespoon of olive oil over medium heat.
Add the porck and cook until browned. About 4 minutes on each side.
Transfer to a cutting board and let cool; cut into thin strips.
In the same skillet, heat 1 tablespoon of evoo on medium heat. add the onion and cook until soft, about 4 minutes. Stir in the tomatoes, garlic and the chipotle. cook until mixture thickens about 3 minutes. Stir in the pork and chopped cilantro.
Heat a grill pan over medium heat. Brush one side of tortilla with remaining evoo. stuff with mixture and cok until cheese is melted
